This has been one of this year's fun creations. We purchased some Italian Abate Fetel pears - they are large, reallly long, and somewhat mild. This became the base for adding in freshly ground cardamom, cinnamon, sage, and roasted black pepper. To sweeten this a bit, we added both white and brown sugar. Then pectin and lemon juice. It reminds us of a winter morning around Thanksgiving - oh, yum!
